Bruschetta with Roasted Fig, Rosemary Ricotta and Pistachio Dust 0 Picture

Ingredients

  • 36 slices (1/2-inch thick) baguette bread, about 1 loaf
  • 1/4 cup extra-virgin olive oil
  • 1 cup ricotta
  • 1 tsp lemon zest
  • 2 TBS chopped fresh rosemary
  • 15 figs, roasted and coursly chopped
  • 1/2 cup shelled pistashios

Preparation

Step 1

Mix together ricotta, lemon zest & rosemary. Set aside.

Grill figs until just charred, and chop coursly...set aside.

In mini food processor, pulverize pistachios and set aside the "dust".

Brush bread with olive oil and grill or broil til golden brown.

Top with ricotta blend, helping of roasted figs and light dusting of pistachio powder.
