Ingredients
- 4 items frozen hash brown potato patties, prepared without fat
- 1/2 cup egg beaters egg substitute
- 3 egg whites
- 3 slices uncooked Canadian style bacon, diced
- 1/8 teaspoon hot pepper sauce, optional
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 8 teaspoons ketchup

Preparation
Step 1
Spray large nonstick skillet with nonstick spray and place over medium heat.
Add the hashbrowns and cook till the bottoms are crispy, 7-9 minutes. Turn and cook until crisp, about 5 minutes.
Meanwhile, whisk together eggs, bacon, pepper sauce, salt, and pepper in a medium bowl.
Spray second large skillet and place over medium heat. Add the egg mixture; cook, stirring occasionally just until set, about 2 minutes.
Place the hasbrowns on 4 plates. Top each patty with one-fourth of the eggs and serve with 2 teaspoons ketchup.
