Ingredients
- 1 1/2 lb pork tenderloin
- 1/2 cup butter
- 1 lemon rind
- 1/2 tsp Tabasco tbs lemon juice
- 1 grated
- 3 tbs grated onion
- 3 tbs brown sugar
- 1 tsp coriander
- 1 /s tsp ground cumin
- 1/2 tsp ground ginger
- 1 Clove garlic chopped
- 1/2 cup Indonesian Soya or Tamari soy
- little r salt & pepper
- Small wooden skewes (8”)

Preparation
Step 1
Cut Pork into ¾” cubes & place in shallow dish.
Melt butter in saucepan and add remaining ingredients, bring to boil and simmer for 5 min. Let cool, pour over meat, cover and leave overnight in fridge. Turn periodically (butter will be stiff don’t worry). Remove meat from marinade (reserve) & put 4 – 5 pieces on skewers, grill on BBQ for about 15 min. until done (don’t overcook) turn frequently. Keep warm in oven. Best served from grill. Reheat marinade and pour over meat. Set on a platter on a bed of rice. Great with a spinach salad.
