Ingredients
- 1 1/2 lbs chicken breasts, cut into cubes
- 3 carrots, peeled and cut into chunks
- 1 onion, diced
- 4 cloves of garlic, minced
- 1 large sweet potato, peeled and cut into chunks
- 1 can chickpeas, rinsed and drained
- 1 1/2 Tbsp tomato paste
- 2 1/2 tsp cinnamon
- 2 1/2 tsp cumin
- 3/4 tsp coriander
- 3/4 tsp cayenne pepper
- 1 1/2 cup green beans, cut into 1 inch pieces
- Chicken stock

Preparation
Step 1
Place all of the ingredients into a 3 1/2 or 4 quart slow cooker and add enough chicken stock to cover. Cover and cook on low for 6-8 hours. Serve over whole wheat couscous or brown rice if desired.
