Ingredients

  • Sauce:
  • 3 1/2 c. cooked rice (1 c. raw)
  • 1 16 oz. can black beans, drained
  • 1 1/2 c. canned corn, drained
  • 1/3 c. chopped scallions
  • 2 jalapenos, seeded and minced (fresh or from a jar)
  • 1/3 c. corn oil
  • 2 T lime juice
  • 1 T brown sugar
  • 1 T chili powder
  • 1 T salt
  • 1/2 t cumin

Preparation

Step 1

Combine rice, beans, corn, scallions, and peppers.
Whisk together remaining ingredients and toss with rice mixture.

Serve at room temperature.
