Ingredients
- Sauce:
- 3 1/2 c. cooked rice (1 c. raw)
- 1 16 oz. can black beans, drained
- 1 1/2 c. canned corn, drained
- 1/3 c. chopped scallions
- 2 jalapenos, seeded and minced (fresh or from a jar)
- 1/3 c. corn oil
- 2 T lime juice
- 1 T brown sugar
- 1 T chili powder
- 1 T salt
- 1/2 t cumin
