Ingredients
- 1 8 oz 4x4 piece beef tenderloin. salt and pepper to taste
- 6 oz light cream cheese
- 2 tsp fresh lemon juice
- 1/2 tsp sugar
- 2 tbsp finely chopped basil
- 1 8 inch cucumber, sliced into 32 quarter inch rounds
- 1 small tomato, seeded and finely diced
- 2 tbsp finely diced red onion

Preparation
Step 1
season beef and grill over medium-high heat 4-5 mins on each side. cut into 8 equal pieces, then slice each piece into 4 slices
combine cream cheese, lemon juice, sugar and basil in a bowl. put in ziploc bag. twist bag until mixture is forced to one corner. using scissors, snip off the corner of the bag.
arrange steak slices on cucumber rounds
squirt mixture on top of the meat. garnish with onions and tomatoes
