Ingredients

  • 1 (15 oz) can black beans, drained and rinsed
  • 3/4 cup chicken broth
  • 1/2 c. thick n chunky salsa
  • 1/2 t. cumin
  • 2 T. sour cream
  • 1 T. sliced green onions

Preparation

Step 1

In food processor combine beans, broth, salsa and cumin. Process 1 minute or until smooth.

Heat bean mixture in saucepan over medium heat until thoroughly heated.

Ladel soup into 2 soup bowls. Spoon 1 T. sour cream on top and swirl gently. Sprinkle with onions.
