Ingredients

  • 1 1/4 cups light cocount milk
  • 3 T curry powder
  • 1 T fresh lime juice
  • 1 tsp. kosher salt
  • 1/4 tsp. cayenne pepper
  • 1 lb. boneless skinless chicken breasts, cut into 1-2 inch chunks
  • 1 cup large green grapes
  • 2 red bell peppers, cut into 1-2 inch chunks

Preparation

Step 1

Whisk together coconut milk, curry powder, lime juice, salt, and cayenne for marinade in bowl.
Toss chicken chunks in marinade to coat; cover and refrigerate for 30 minutes.
Preheat grill to medium-high heat.
Thread chicken onto 8 skewers, alternating with grapes and red pepper chunks.
Grill skewers, covered, turning once, until chicken is cooked through, about 8 minutes total.
