Ingredients
- 3 Cups Pinto Beans
- 1 Medium Onion
- 1 Chili Pepper
- 1/2 lb. smoked ham or 1/4 lb. smoked bacon
- 1/2 tsp. black pepper
- 1/2 tsp baking soda
- 1 tsp salt

Step 1
Rinse beans. Put into large stockpot, cover with water and bring to a boil.
Shut off heat, let soak for an hour and then drain. Cover again with cold water. Add onion, chili pepper, smoked meat, black pepper, and baking soda. Bring to a boil, reduce heat and simmer for 3 hours or until tender. Add water as needed, stirring occasionally during cooking. Add salt to taste.
*Can substitute 1 tsp liquid smoke flavoring plus 2 Tbsp of olive oil for meat.
