Ingredients

  • 5-1/2 lbs tomatoes, peeled
  • 1 tbsp bottled lemon juice, (not fresh), per pint
  • 1/2 tsp coarse salt, per pint
  • 1/2 tsp granulated sugar, per pint

Preparation

Step 1

Tomatoes may be left whole or cut up. Place in large pot. Heat on medium until starting to boil. Pour into hot sterilized jars to within 1/2 inch of top.

Add lemon juice, salt and sugar to each pint. Secure lids. Process in hot water bath 35 minutes for pints, 45 minutes for quarts.
