Ingredients
- 1/2 cup olive oil, plus 1 tbs.
- 1 dried red chili pepper finely chopped
- 1 lg onion; chopped
- 3 lg garlic cloves; minced
- 1/2 cup fresh basil; chopped
- 1 Tbs oregano
- 2 cn clams, drained and reserve juice; chopped
- 1 lb dried spaghetti
- 1 cup parsley; chopped
- grated parmesan cheese
- salt and pepper to taste

Preparation
Step 1
Put olive oil into large cast iron skillet and heat slowly. Add dried chili pepper, onion and garlic. Cook slowly for about 30 minutes or until onions are very soft. Add basil, oregano, salt, pepper and clam broth. Continue to simmer until some of liquid is reduced. Keep warm. Cook spaghetti until just al dente. As pasta is cooking, add clams, parsley amd 3 tbs. of cheese to sauce and simmer on low for about 5 minutes. After draining pasta, stir into sauce and toss. Sprinkle generously with grated cheese and serve directly from skillet.
