Chicken and Fire Roasted Corn Lettuce Snack Wraps

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 tsp ground cumin
  • Juice of 1 lemon
  • Juice of 2 limes
  • 2 ears of corn
  • 2 plum tomatoes
  • 1 sweet yellow onions, sliced into 1/2" rings
  • 1 jalapeno pepper
  • 1 peach, diced
  • 1 avocado, cubed
  • 1/2 cup fresh cilantro leaves
  • sea salt and pepper
  • 1 head Bibb lettuces, leaves separated into cups

Preparation

Step 1

1. Place chicken in a bowl with cumin, lemon juice and half of the lime juice. Mix to coat and let marinate for 15 minutes.
2. Heat a grill and coat grates with canola oil. Grill chicken, corn, tomatoes, onion slices, and jalapeno for 15-20 minutes.
3. Remove food from grill, cut corn off cob and chop everything into cubes.
4. In a large bowl, toss ingredients and add lime juice. Season to taste and serve in lettuce cups.
