Ingredients
- 2 sliced large bananas
- 3 tbsp fresh lemon juice
- 3 large eggs
- 3 oz superfine (caster) sugar
- 2 tbsp cognac or rum
- 2 oz dried shredded (desiccated)
- Coconut

Preparation
Step 1
Put the banana slices in a 6 inch (15 cm) souffle mold (mould).
Pour over the lemon juice.
Whisk the eggs in a bowl.
Add the sugar and cognac or rum, still whisking.
Stir in the coconut and whisk again.
Pour over the bananas.
Microwave for 6 minutes on MEDIUM-HIGH, until the flan shrinks away from the edges of the mold (mould).
Leave to cool, then refrigerate.
