Ingredients

  • 2/3 cup balsamic vinegar
  • 1/3 cup brown sugar
  • 1/3 cup oj
  • 3 garlic cloves
  • 2 tblsp extra-virgin olive oil
  • pinch salt and pepper
  • 1 1/2 lbs boneless, center-cut, pork loin chops 1-2 inches thick
  • 1 green apple, cut into 1 inch chances
  • 1 red onion, cut into 1 inch chances
  • skewers

Preparation

Step 1

Measure vinegar, brown sugar, oj, garlic, oil, salt and pepper into zip bag. Seal and shake. Cut pork chops and add to bag, seal and refrigerate for 1 hour to 1 day.
Remove pork from marinade, and place marinade (minus garlic) in small saucepan. Heat to boiling and boil to slightly thickened and reduced by half. 5-7 min.
Skewer pork, apples and onions. Sprinkle with salt and pepper. Heat grill pan to medium-high. Drizzle with oil. Grill skewers for 4 min. Turn quarter of way and grill for 4 min. Finish 2 other sides, 4 min. each.
Serve over rice and drizzle with marinade.
