Ingredients

  • 1 cup butter
  • 1 1/2 cups brown sugar
  • 1 1/4 cups coconut
  • 1 egg
  • 1 tsp vanilla
  • 1 cup rolled oats
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • May substitute 1 1/4 cups brown sugar and 1/2 cup honey.

Preparation

Step 1

Beat butter with brown sugar until light and fluffy. Add egg and vanilla and mix well. Add rest of ingredients and mix. Place by teaspoons on cookie sheet and press down with fork (dipped in flour). Bake at 350F for 10-12 minutes.
