Ingredients
- 2 C flour
- 1 tsp salt
- 2 C milk
- 4 T melted butter
- 3 eggs, beaten
- 2-4 T roast drippings

Step 1
1. Sift together the flour and salt in a large bowl. In another bowl, beat together the eggs milk and melted butter until light and foamy. Stir in flour/salt mixture just until incorporated and smooth.
2. Cover bowl with plastic wrap and refrigerate at least 2 hours or overnight
3. Heat oven to 400 degrees. Add roast drippings to a muffin pan, putting at least a teaspoon of drippings in the bottom of eash well, and place in oven for a couple of minutes.
4. Carefully pour the batter into the wells of muffin pans, filling just 1/3 full. Cook for 15 minutes at 400 degrees, then reduce the oven to 300 and cook for 15 more minutes, until puffy and golden brown.
