Ingredients
- 1 egg white
- 2 tbsp sugar
- 1 egg yolk
- 1 cup milk
- 2 tbsp Minit tapioca
- Few grains of salt
- 1 tbsp sugar
- 1/2 tsp vanilla
- 1/4 cup crushed pineapple

Step 1
Beat egg white until foamy. Add 2 tbsp sugar and beat until meringue stands in soft peaks. Set aside.
Blend together, in the top of a double boiler, tapioca, 1 tbsp sugar, egg yolk, salt. Slowly blend in milk. Cook and stir constantly until mixture is thickened.
Remove from heat. Add vanilla, fold in egg white and pineapple. Serve in sherbet dishes either warm or cold.
