Ingredients

  • 4 cups cooked chicken, cut into bite sized cubes
  • 1 can cream of chicken soup
  • 1 cup orange juice, divided
  • 1 package Uncle Ben's long grain and wild rice
  • 1 medium onion, chopped
  • 1/2 pound sliced mushrooms
  • 1 tbsp. butter
  • toasted slivered almonds

Preparation

Step 1

Combine chicken, soup and 1/2 cup orange juice.

Cook rice according to package directions but substitute 1/2 cup of water with 1/2 cup of orange juice. Put aside.

Saute mushrooms and onion in butter.

Combine chicken, rice and vegetables in casserole dish. Top with toasted almonds.

Bake at 350 degrees for 25 to 30 minutes. Do not overcook.
