Ingredients
- 9 oz. elbow macaroni
- 1/2 cup chopped onion
- 2 Tbsp. butter
- 3 Tbsp. all-purpose flour
- 2 cups milk
- 1/2 cup whipping cream or half and half
- 1 bay leaf
- 1 Tbsp. Dijon mustard
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 cups shredded Cheddar cheese

Step 1
In a Dutch oven, cook the macaroni according to package directions. Drain, and return to the Dutch oven.
Meanwhile, in a medium saucepan, cook and stir the chopped onion in the butter over medium heat about 4 minutes, or until tender. Stir in the flour, add the milk, whipping cream, bay leaf, mustard, salt and pepper. Cook and stir 5 minutes until the mixture is thick and bubbly.
Remove and discard the bay leaf.
Add the sauce and cheese to the pasta in the Dutch oven. Cook and stir over medium heat for 8 to 10 minutes or until hot and bubbly.
