Ingredients

  • 1-1/2 lbs ground beef
  • 1 small onion, diced
  • 1/2 cup green pepper, chopped
  • 18 ounces tomato paste
  • 1-1/4 cups water
  • 1 cup salsa
  • 2 cups fresh or frozen corn
  • 1-1/2 cps chopped fresh tomatoes
  • 3/4 cup ripe olives, sliced
  • 1 envelope taco seasoning mix
  • 3 tsp garlic powder
  • 1-1/2 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper
  • corn tortillas
  • 8 cups shredded mozzarella cheese

Preparation

Step 1

In a skillet over medium heat, cook beef, onion and green pepper until meat is no longer pink; drian. In a bowl, combine tommato paste and water until blended; add salsa. Stir into meat mixture. Stir in the corn, tomatoes, olives and seasonings. Place tortillas on ungreased baking sheet. Spread each with 1/4 cup meat mixture to within 1/2 inch of edge and sprinkle with 1/4 cup cheese. Bake at 375 degrees for 5-7 minutes or until the cheese is melted.
