Ingredients

  • 2 cups flour
  • 1/2 tsp bkg powder
  • 1/2 tsp bkg soda
  • 1/2 tsp salt
  • 1 cup sugar
  • 1/2 cup butter
  • 1 tblsp. Lemon zest
  • 1 cup ricotta
  • 1 egg
  • 1 tblsp lemon juice
  • 1/2 tsp almond extract
  • 1/3 cup sliced almonds

Preparation

Step 1

Whisk together dry ingredients. Beat the sugars, butter, and lemon zest till light. Beat in the ricotta. Add the lemon juice and the almond extract. Add the dry ingredients and blend. Pour into 12 lined muffin cups. Sprinkle with sugar and almonds. Bake @ 350 for about 20 minutes.
