  • 12 Plum Tomatoes
  • 4 Tbsp. olive oil
  • 1 1/2 Tbsp. balsamic vinegar
  • 2 garlic cloves, minced
  • 2 Tbsp. sugar
  • 1 1/2 tsp. kosher salt
  • 1/2 tsp. black pepper

Step 1

Preheat the oven to 450 degrees.

Cut the tomatoes in half lengthwise. Core them and remove the seeds. Arrange the tomatoes on a sheet pan, cut side up, in a single layer. Drizzle with the olive oil and balsamic vinegar.

Sprinkle the garlic, sugar, salt and pepper over the tomatoes.

Roast for 25 to 30 minutes until the tomatoes are concentrated and beginning to caramelize.

Serve warm or at room temperature.
