Asian Beef with Mandarin Oranges

Ingredients
- 2 tblsp vegetable oil
- 2 lbs boneless beef chuch, 1/2 inch strips
- 1 small onion
- 1/3 cup soy sauce
- 1/4 tsp salt
- 2 tsp minced ginger
- 1 small green pepper, sliced
- 1 pk shiitake mushrooms
- 1 head bok choy
- 1-5 oz can sliced water chestnuts, drained
- 2 tblsp corn starch
- 1-11 oz mandarin oranges, syrup reserved
- 2 cups beef broth
- 6 cups rice

Preparation
Step 1
Heat oil over medium-high heat. Add beef, browning on all sides. Transfer to crock-pot.
Add onion to skillet. Stir until softened. Add soy, salt, ginger, pepper, mushrooms, bok choy, water chestnuts. Cook 5 min. Spoon over beef.
Whisk together corn starch and syrup. Stir in beef broth and pour in crock-pot. Cover and cook high 5-6 hours.
Stir in oranges.
