Red Quinoa and Wheat Berry Salad

Ingredients
- Dressing:
- 1/2 cup wheat berries, well rinsed and drained
- 2 cups cooked red quinoa
- 1/2 cup dried cranberries
- 1/3 cup whole almonds
- 1/3 cup chopped fresh parsley
- Zest of 1 lemon
- 1/4 cup fresh lemon juice
- 2 tbsp minced shallot (about 1) or substitute green onion or red onion
- 1/4 cup olive oil
- 2 tsp liquid honey
- 1/2 tsp Dijon mustard

Preparation
Step 1
In a medium saucepan bring 1 1/4 cups water to a boil. Stir in wheat berries and return to a boil. Reduce heat to low, cover and simmer 45-50 minutes or until tender. Remove from heat and drain. Allow to cool.
In large bowl toss together cooked quinoa, wheat berries, cranberries, almonds and parsley.
Whisk together dressing. Pour over salad and toss well.
Store in fridge for up to 3 days.
