Ingredients
- Dressing:
- 1 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon dried oregano
- 2 teaspoons fresh minced garlic
- 1/2 tablespoon dried basil
- salt and pepper
- 3 tablespoons red wine vinegar
- 2-3 tablespoons parmesan cheese
- 1-2 teaspoons sugar ( I use 1)
- For Salad:
- 2 romaine lettuce, chopped
- grape tomatoes cut in half
- 1 large cucumber cut in slices
- 1 red onion cut in slices
- 1/2 pound feta cheese crumbled
- 1 cup Greek Olives or black olives
- Black pepper

Preparation
Step 1
1. In a processor, process the oil, lemon juice, oregano, salt and pepper, garlic, basil, vinegar, and parmesan cheese until smooth, adjusting all ingredients to suit taste.
2. Chill in fridge for a couple of hours before using to blend flavors. Remove from freidge 1/2 hour prior to using and shake well.
3. Prepare salad ingredients in a large bowl or on a large platter. Pour dressing over and enjoy!
