Ingredients

  • 1 cup chopped red onion
  • 2 cloves garlic, minced
  • 1 1/2 cups chopped zucchini
  • 1 can diced tomatoes, undrained
  • 1 cup tomato sauce
  • 2 tbsp. tomato paste
  • 2 tbsp. each chopped fresh oregano and basil, or 1 1/2 tsp. each dried
  • 1/2 tsp. pepper
  • 1/4 tsp. crushed red pepper flakes
  • 12 oz penne, uncooked (4 cups)
  • 8 oz uncooked jumbo shrimp, peeled
  • 8 oz uncooked bay scallops
  • 1 cup crumbled feta cheese
  • chopped fresh parsley for garnish

Preparation

Step 1

Spray a non-stick pan with oil. Add onion and garlic. Cook and stir over medium heat for 3 mins. until onions are softened. Add zucchini and cook 3 more mins. Add tomatoes and liquid, tomato sauce, tomato paste, oregano, basil, pepper and red pepper flakes. Bring to a boil. Reduce heat to medium-low and simmer, uncovered for 10 mins.

While sauce is simmering, prepare penne according to directions. Drain well and keep warm.

Add shrimp and scallops to sauce. Increase heat to medium-high and cook 3-4 mins, until seafood is cooked through.

To serve, spoon cooked penne onto plates, top with sauce followed by feta and parsley.
