Ingredients

  • 1 tbsp butter
  • 1/2 lb boneless skinless chicken breasts
  • 1/2 cup fresh chopped onion
  • 1/2 cup fresh chopped celery
  • 1 medium garlic cloves , minced
  • 26 oz canned unsalted diced tomatoes
  • 1 cup fresh mushroom slices
  • 1/2 cup chopped parsley
  • 1 small green bell peppers , chopped
  • 1 tsp dried basil
  • 1 tsp ground oregano
  • 1/4 tsp salt (optional)
  • 1/4 tsp black pepper
  • 1/8 tsp ground red pepper (cayenne)

Preparation

Step 1

1 In large skillet, melt butter over low heat. Add chicken breasts, cook until lightly browned.
2 Remove chicken from skillet. Chop. Set aside.
3 Add onion, celery, and garlic to warm skillet. Sauté vegetables until tender.
4 Return the chicken to skillet. Add undrained tomatoes, mushrooms, parsley, green peppers, basil, oregano, salt, pepper, and cayenne pepper.
5 Cover and simmer for 20 minutes. Serve.
