Eggplant Parmesan

Ingredients

  • 1 Lg. Eggplant
  • 2 lbs. Ground Beef
  • 1 Lb. Italian Sausage
  • 1-6 oz. can tomato paste
  • 1-16 oz. can tomatoes
  • 4 . Tbsp. Oil
  • 2 cloves of Garlic
  • Dash of Oregano
  • Dash of Basil
  • 1 1/2 c. Italian Bread crumbs
  • Parmesan cheese (fresh or powder)
  • 2-8 oz. pkgs. Mozzarella Cheese (or mixed Italian Cheeses)
  • Salt and Pepper to taste

Preparation

Step 1

Wash eggplant and trim ends, cutting eggplant lengthwise. Hollow out center setting flesh of eggplant aside, leaving about a 1/4 inch shell. Cube insides, sautéing in oil until tender. Drain on paper towel and set aside. Brown beef & sausage, adding garlic, oregano, basil, salt, pepper, tomatoes and paste, simmering about 15 minutes. Add bread crumbs and parmesan and return to shells. Bake @ 350 F about 15 minutes or until eggplant is somewhat tender. Top with shredded cheese and return to oven until cheese is melted.
