Cup milk -- scalded
C shortening -- I use Smart Balance oleo
tsp salt -- or less
pkg. dry yeast (At times I add 1 tsp more)
beaten eggs (To reduce cholesterol, I use 1 whole
egg and 4 egg whites)
C flour (approximately)
Let milk cool until just warm. Combine milk, shortening, sugar and salt. Add eggs. Dissolve yeast in approx. 1//4 C very warm water (115 deg. or so.) Add half of flour to milk mixture - stir in, then add yeast - stir in, then flour ' til you have a soft dough. Put dough in a greased container, Cover and let rise until almost double. Punch down. Let rise 10 minutes -- then shape for whatever rolls your are making. Place in pan and let rise til almost double again. Bake at 350 deg for 20 to 30 minutes or depending on what you are making.
