Artichoke Sausage Soup

Ingredients

• 12 oz Italian Sausage (Tish’s comment: I use more.)
• Two 14 oz cans artichoke hearts, drained, or two 9 oz packages frozen, thawed
• Three 14 oz cans Italian plum tomatoes
• 1 package onion soup mix
• Three to four cups water
• One half teaspoon Italian seasoning
• One half teaspoon oregano
• One half teaspoon basil

Preparation

Step 1

Crumble sausage into pieces in a soup pot; brown and drain off fat. Cut artichoke hearts and tomatoes into bite-sized pieces and add to sausage. Add remaining ingredients and heat through.

Can be made several days in advance.
