Ingredients
- 1/2 10-ounce package frozen chopped spinach, thawed and squeezed dry
- 1/4 cup scallions, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, minced
- 1/4 cup feta cheese, crumbled
- 2 ounces cream cheese, softened
- 1/4 cup farmer (or cottage) cheese
- 1 tablespoon grated Kefalotyri (or Parmesan) cheese, grated
- 1 egg
- Salt and pepper to taste
- 30 Athens® Mini Fillo Shells

Preparation
Step 1
In food processor, combine spinach with scallions, parsley, dill, cheeses, eggs, salt and pepper. Process until smooth.
Bake in preheated 350ºF oven for about 10-15 minutes or until golden brown. Serve immediately.
