Ingredients

  • 1/2 10-ounce package frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup scallions, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, minced
  • 1/4 cup feta cheese, crumbled
  • 2 ounces cream cheese, softened
  • 1/4 cup farmer (or cottage) cheese
  • 1 tablespoon grated Kefalotyri (or Parmesan) cheese, grated
  • 1 egg
  • Salt and pepper to taste
  • 30 Athens® Mini Fillo Shells

Preparation

Step 1

In food processor, combine spinach with scallions, parsley, dill, cheeses, eggs, salt and pepper. Process until smooth.

Bake in preheated 350ºF oven for about 10-15 minutes or until golden brown. Serve immediately.
