Ingredients
- 10 oz whole grain Rotini cooked according to box directions
- 6 medium carrots cleaned and cut into thin circles
- 4 stalks celery cleaned and chopped
- 1 package of fresh mushrooms ( 8 oz )
- 1 lb of cooked ham chopped into 1/2 pieces
- 1/4 teaspoon ground mustard
- 1/8 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt/ pepper
- 1/4 cup chopped onions
- 3 tablespoons brown sugar
- 4 tablespoons unsalted butter
- 3 tablespoons all purpose flour
- 1 can pineapples ( 20 oz net weight )
- 1 cup milk
- 1 1/2 tablespoons coconut rum /
- or 1 1/2 tablespoons rum and 1/2 tablespoon coconut ( finely ground )
- 4 tablespoons fresh parsley ( chopped for garnish )

Step 1
1. cook whole grain Rotini noodles according to box directions also add carrots and celery.
2. in a medium size skillet melt 2 tablespoons butter add onions and cook 5 to 6 minutes
then add mushrooms and cook until tender.
3. place the can of pineapples into a blender and blend well until it becomes a foamy type
liquid set aside.
4. in a large skillet melt 3 tablespoons butter add the 3 tablespoons flour cook 2 to 3 minutes
then add the 1 cup milk and stir with a wisk to mix well , let cook on low temperature until
it begins to thicken .Add salt / pepper,cayenne pepper,ginger,brown sugar,
ground mustard, and coconut rum.
5. drain the noodles,carrots, and celery add the onions an mushrooms and diced ham stir to mix well. place on dinner plates, then pour pineapple rum sauce over each plate. top with 1 tablespoon fresh parsley for garnish .
