Ingredients
- 1/4 C butter, melted
- 2 TBSP parmesan cheese
- 1 clove garlic, minced
- 12 thin slices of french bread
- 3/4 lb cooked lobster meat, cut bite size
- 2 C cooked small broccoli florets
- 1 tomato, seeded and chopped
- 1/2 C mandarin orange, diced
- 1/4 C red onion, diced
- 1/3 C balsamic viaigrette dressing
- 1 TBSP parsley, minced

Preparation
Step 1
Preheat oven to 350.
Combine lobster, broccoli, tomato, orange and onion in a bowl. Blend vinaigrette and parsley; pour over salad and toss to blend.
Combine butter, parmesan cheese and garlic in a small bowl. Brush mixture over french bread slices and bake about 6 minutes.
Serve lobster salad with warm garlic toast.
