Ingredients

  • 1/3 cup pine nuts
  • 1 cup chicken broth
  • 1 tbsp olive oil
  • 1 pkg. PC Moroccan-spiced Couscous or 160 g couscous
  • 1/3 cup Sultana raisins
  • 1/3 cup dried apricots, diced
  • 2 green onions, thinly sliced or use finely diced red onion

Preparation

Step 1

In frying pan over medium low heat, toast pine nuts for 4-5 minutes, stirring occasionally until golden. Set aside.

Place broth in saucepan. Bring to a boil, covered. Remove from heat. Stir in olive oil, couscous, raisins and apricots. Cover and let stand 5-6 mins. Using 2 forks, fluff couscous. Mix in pine nuts and onions.
