- 1/2 cup butter
- 1/2 cup peanut butter
- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1/2 tsp vanilla
- 1 cup all-purpose flour
- 1/2 tsp baking soda

Line pans with parchment paper.
In large bowl, beat butter with peanut butter; beat in sugar and brown sugar. Beat in egg (one at a tie if recipe doubled); beat in vanilla. In separate bowl, whisk flour with baking soda; stir into butter mixture until blended.
roll by rounded tablespoonful into balls. Place 2" apart on pans. Press with fork to flatten to 1/2" thickness. Bake in top and bottom thirds of 350º oven, rotating and switching pans halfway through, until golden on bottoms and edges are darkened, 12 - 15 minutes. Transfer to racks to cool. Store in airtight container for 1 week or freeze for up to 3 months.
