Ingredients

  • 4 Tbls. butter
  • 1/4 c. flour
  • 2 cups chicken broth
  • 2 cups half and half
  • several cloves garlic, minced
  • 15 ounces Brie Cheese, rind removes and cut into cubes

Preparation

Step 1

In sauce pan over medium-low heat, melt butter. Add garlic and cook still softened. Add flour and cook 1 minute. Gradually add liquids, stirring constantly until slightly thickened. Soup can be made in advance to this point and stored in refrigerator. Over low heat add cubes fo brie cheese. Stir constantly until all the cheese has melted. Add salt and pepper if desired. Garnish with pamesan cheese and thinly sliced green onions.
