Ingredients
- 1 1/2 cups uncooked whole wheat shell pasta
- 2 teaspoons olive oil
- 1 cup chopped onion
- 1 (16-oz.) can garbanzo beans, drained and rinsed
- 1 (16-oz.) can no salt added diced tomatoes
- 2 tablespoons chopped parsley
- 1 teaspoon cumin

Preparation
Step 1
Cook pasta according to package directions. Heat the olive oil in a large skillet over medium-high heat; add onion and saute until tender. Add beans and tomatoes and simmer for 5 minutes. Add cooked, drained pasta. Add parsley and cumin. Simmer for 5 minutes. Serve.
SERVING SUGGESTION: A big spinach salad tossed with Easy Balsamic Vinaigrette (see recipe).
