ZUCCHINI CAKE

Ingredients

• 1 stick butter
• 1/2 cup oil
• 1 3/4 cups sugar
• 2 eggs
• 1 1/2 tsp vanilla
• 2 1/2 cups flour
• 1 tsp baking soda
• 1/2 tsp baking powder
• 1/2 tsp salt
• 3 heaping Tbsp baking cocoa
• 2 cups grated zucchini (unpeeled)
• 1 cup buttermilk
• 1 cup chocolate chips
• 2 Tbsp sugar

Preparation

Step 1

Cream the butter, sugar, oil, eggs and vanilla together. Add the dry ingredients alternately w/ the milk and blend well. Add the grated zucchini and mix. Pour into a greased and floured 9 x 13 inch pan. Sprinkle the chocolate chips and 2 tablespoons of sugar over the top. Bake for 40 min @ 350°F.
