Ingredients
- Filling:
- 2 cans chunk chicken
- 1 can chopped green chiles
- 1 can chopped black olived
- 1 diced onion
- 1/2 package cream cheese
- Sauce:
- 2 cans of Cream of Chicken Soup
- 1 pint of whipping cream
- 10 medium size tortillas
- grated cheese (I like a combination of cheddar and mozzerella cheese)

Preparation
Step 1
Preheat oven to 350 degrees
Mix the filling ingredients together in a medium saucepan. Heat through until cream cheese is melted and onions are softened.
Spread approximately 2 Tablespoons of meat mixture on one tortilla, sprinkle with cheese.
Pour a small amount of the sauce mixture in the bottom of a casserole dish (enough to coat the bottom).
Place rolled enchiladas in the pan. Pour the remaining sauce over the enchildas and sprinkle with cheese.
Bake until bubbly and browned, approximately 30 minutes.
Serve with rice and beans.
