  • 1/2 lb side bacon, diced
  • 1 large onion, chopped
  • 3 cups cooked rice
  • 1 can (498 ml) sauerkraut, drained
  • 1/2 cup water
  • Salt and pepper

Preparation

Step 1

Cook diced bacon and chopped onion in large frying pan until bacon is crisp. Pour off excess fat. Stir in cooked rice and sauerkraut. Add water. Cover pan and allow to simmer for about 30 minutes. Add more water, if necessary, to keep mixture moist. Turn into a buttered casserole and bake at 350 degrees for 55 minutes.
