Ingredients
- 1 lb Chicken of the Sea jumbo lump crab
- 4 Tbsp butter or margarine
- 1/4 c flour
- 1/2 bell pepper, finely chopped
- 1 sm onion, finely chopped
- 1 tsp fresh chopped parsley
- 1/3 tsp old bay seasoning
- 1/4 tsp granulated garlic
- salt
- white pepper
- flour
- 2 eggs, beaten
- dry breadcrumbs
- oil for frying

Preparation
Step 1
1. Melt the butter and add the flour, whisk until smooth & add milk. Bring to boil stirring constantly.
2. Add onion, pepper, parsley & spices. Remove from heat.
3. Fold in lump crabmeat.
4. Season with salt & pepper to taste.
5. Refrigerate until cool & form into 4 oz. cakes with floured hands.
6. Dip cakes in beaten egg & transfer to dry crumbs, covering completely.
7. Fry cakes in oil in deep sauté or sauce pan until golden brown. Turn occasionally.
8. Drain on paper towels & serve with lemon wedge and your favorite seafood sauce.
