Asparagus Soup

Very good!!
ZONE INFO: This recipe has a total of 7 carbs as I have it listed here. It does contain about 3 blocks of carbs from potatoes which isn't a favorable carb but I prepared it like that anyway. You could probably cut back on the potato & it would still be very good but then it would probably be necessary to cut back on the chicken broth to compensate.

Ingredients
- 1 1/2 cups onions, diced (1 carb)
- 1/2 teaspoon garlic, chopped
- 6 cups fat-free, low sodium chicken broth
- 3 cups asparagus, diced (about 1 1/2 bunches) (3 carbs)
- 1 cup potatoes, diced (3 carbs)
- 1 dash salt
- 1/2 teaspoon yellow mustard seed
- 1/2 teaspoon dry mustard
- 1 dash 17-spice mix (didn't use, couldn't find - made our own mix of spices)

Preparation
Step 1
Sautee onions and garlic in 1/4 cup of the chicken broth. If the rest of your dinner isn't going to provide enough fat - you can use olive oil here - about 3 teaspoons.
Add Asparagus, potato, and remaining stock. Bring to a boil. Reduce heat and simmer 15 to 20 minutes.
Remove soup from heat and puree with a food processor or immersion blender. Return to the pan and season with spices. Serve.
