Ingredients
- 2 cups chopped cucumber
- 1/4 cup finely chopped red onion
- 1/4 cup diced tomato
- 2 tablespoons chopped fresh basil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons white vinegar
- 3 tablespoons SPLENDA® ESSENTIALS™ No Calorie Sweetener with Fiber, Granulated
- 4 (6 ounce) salmon fillets (grilled to desired doneness)

DIRECTIONS
1.
COMBINE all ingredients except salmon in a medium size bowl. Refrigerate at least 1 hour.
2.
GRILL salmon to desired doneness and top with relish.
NOTE
Serving Size: 6 ounce fillet + ½ cup relish
