Ingredients

  • 3 Tbs. olive oil
  • 2 boneless skinless chicken breast halves
  • 2 egg whites
  • 2 tsp cornstarch
  • Juice of 1/2 lemon or 2 Tbs
  • 1 cup bread crumbs
  • 1 tsp dried parsley
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3/4 cup fine chopped pecans
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Dressing
  • 1/4 cup honey
  • 3 tbs dijon mustard
  • 3 tbs olive oil
  • 1 tbs minced shallots
  • 1 tbs apple cider vinegar
  • 2 tbs of lemon juice
  • salt and pepper to taste
  • 8 cups of salad greens
  • Parmesan Cheese
  • Red onion on salad if you want

Preparation

Step 1

Preheat oven to 450

Prepare chicken by halving and pounding flat. Whisk egg whites, corn starch, lemon in dish for dipping.

Make crust by combining bread crumbs, parsley, salt, pepper, pecans, oregano, thyme, paprika, cayenne in another dish. Crust the chicken and let rest at room temp for 20 min to set crust.

Saute chicken in 3 tbs oil in a large skillet on medium heat about 3 minutes each side. Transfer to oven for 8-10 minutes.

Make dressing. Put sliced chicken over salad greens and sprinkle with cheese and dressing.
