Ingredients

  • 1 lb ground beef
  • 3/4 cup chopped onion
  • 3/4 cup diced celery
  • 3/4 cup shredded carrots
  • 1 bay leaf
  • 1 teaspoon parsely flakes
  • 1/2 teaspoon minced garlic, or 1 clove
  • 4 Tablespoons butter, divided
  • 3 cups chicken broth or stock
  • 4 cups diced, peeled potatoes
  • 1/4 cup flour
  • 8 oz Velvetta, cubed
  • 1 1/2 cups of milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup Sour Cream

Step 1

Brown hamburger in a large saucepan. Set aside. In same pan, saute onion, carrots, celery, parsley & garlic in 1 Tablespoon of butter, till tender. Add broth, potatoes, bay leaf & beef. Bring to a boil, reduce heat & simmer until potatoes are tender. Meanwhile, in a small skillet, melt remaining 3 Tablespoons of butter and add flour, salt & pepper. Cook until bubbly. Add milk and bring to a boil, stirring constantly. Add the cheese and cook over low heat, until melted. Add white sauce mix to soup, gently blending in. Remove soup from heat, blend in sour cream and serve.
