LEMON RAISIN COOKIES

Ingredients
- 1-1/2 cups raisins
- 1 cup water
- 1/2 cup butter/margarine, softened
- 1-1/4 cups brown sugar, packed
- 1 grated rind of lemon
- 2 tbsp lemon juice
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chopped nuts

Preparation
Step 1
Bring raisins and water to a boil in saucepan. Remove from heat. Cool.
Cream butter, sugar and egg together. Add rind and juice.
Add remaining ingredients. Drain and add raisins to batter. Mix well. Drop by spoonfuls onto greased baking sheet. Bake in 375 oven for 8 to 10 minutes.
