Ingredients

  • RED WINE VINAIGRETTE:
  • 1/2 head butter lettuce
  • 1/2 head romaine lettuce
  • 1/2 head iceberg lettuce
  • 1 cup rinsed red kidney beans, patted dry
  • 1 cup rinsed garbanzo beans, patted dry
  • 8 oz. salami, cubed
  • 6 oz. provolone, cubed
  • 2 tomatoes, coarsely chopped
  • Red Wine Vinaigrette (recipe follows)
  • salt
  • pepper
  • 1/2 cup red wine vinegar
  • 3 Tbsp. lemon juice
  • 1 tsp. honey
  • 1 tsp salt
  • 1 cup olive oil

Preparation

Step 1

Cut all of the lettuces into bite-sized pieces.

Combine the lettuces, beans, cheese, salami and tomatoes in a large bowl.

Toss with enough vinaigrette to coat, salt and pepper to taste.



VINAIGRETTE:
Mix the vinegar, lemon juice, honey and salt in a blender. With the machine running, gradually blend in the oil. Season with salt and pepper.
