Ingredients

  • 1 tbsp oil
  • 2 slices back bacon - diced
  • 1 medium onion diced
  • 1 small celery stalk diced
  • 1 large potato diced
  • 1 1/2 cups chicken broth
  • 14 oz can (398 ml) cream corn
  • 1 1/2 cups (375 ml) kernel corn
  • 1 can (385 ml) evaporated milk
  • salt, pepper and nutmeg to taste

Preparation

Step 1

In a large pot, swirl oil and fry bacon. Add onion and celery. Fry until translucent. Add potato and broth/. Cover and simmer for 15 minutes. Add corn and simmer for 3 minutes. Stir in milk and reheat but do not boil. Season with salt, pepper and nutmeg.
