Artisan Fruit & Nut Bread

A bread that I created after eating at Jon George's in new York. Loaded with fruits & nuts and so delicious with wine & cheese. One of my friend/customers calls it a taste of heaven. Yum! This is a 3 day bread & expensive to make.

Ingredients
- Bread:
- Starter: 2 cups sourdough starter
- 1 cup water
- 1 cup white whole wheat flour
- Starter (above)
- 4 cup water
- 4 cups white whole wheat flour
- 8 cups bread flour
- 1-2 cups ap flour
- 3 Tb salt
- 3 1/2 T yeast
- 4 Tb sugar
- 4 Tb butter &/or coconut oil
- 4 cups mixed dried fruit
- 4 cup nuts (assorted)

Preparation
Step 1
Day 1:
Make starter & let sit overnight.
Day 2:
Add starter & all ingredients except salt, nuts & fruit in stand mixer bowl. Mix together & then knead (dough will be sticky). After dough comes together, letmrest for 2 hours. Then knead in salt, nuts & fruit. Shape into 7-8 loaves & let rise for approx 45 min to 1 hour covered. Slash & bake in steamed oven at 375 degrees for 40-50 min until 200 degrees on instant read thermometer.
